Beginning

I have started started this blog in the event that our brewery ever makes it big, we have a record of the early events and the events leading up to its inception. Chris Graham and myself (Matt Wilkos) using borrowed equipment and the knowlegde of books and talking to people we have successfully made it to the secondary fermenting stage of a IPA. For those none drinkers out there, an IPA is short of an India Pale Ale, created for long trips to inda from Britain. It has a high hop content, meaning it's bitter. It's alcohol content is also relitivly high. It took us 4 hours to brew it and has had aout 15 minutes worth of upkeep in the 6 days it has been fermenting. It will be ready just in time for school, we will be transfering to bottles in roughly 7 days. The specific gravity on it was slightly off, but we do not think this will hurt the beer in any way. I will post the pic's when I can get them downloaded.
